It’s unfair that we look back on the year past when the days are darkest. This is literally true (this newsletter comes to you just two days after winter solstice) and, this year, idiomatically spot-on. Another year, another rising tide of COVID, more plans canceled, more difficult decisions to make. Dark days, indeed. Still, there’s hope. Our kids are good reminders of this as they shift from full-throated, tear-stained protest to laughter and play in a matter of minutes. To see the light in 2021 you need only to look up to the stars, down to nature, and into our hard-toiling medical establishments. Yes, 2021 was a year of extraordinary scientific discoveries and breakthroughs. In these feats of science, which we compiled for this end-of-the-year list, we found honest-to-goodness hope for humanity. This holiday season, what more could you ask for?

Try This Cool Science Project With Your Kid
Bored? Looking for an activity? The lemon volcano is calling.
 
What you need:

  • Two lemons and/or two oranges (try both and compare!)

  • Baking Soda

  • Food Coloring

  • Dish soap

  • A Plate

  • Cup

  • Spoons

What to do:

  • Cut the bottom off the lemon (or orange) so it sits on the plate. Turn the fruit over and slice out the inside.

  • Slice the second fruit in half and juice it. Keep the juice off to the side in a cup.

  • Place your orange or lemon core on a tray. Use your spoon to muddle and mash the center of the lemon to break the walls of the fruit cells and release the juices. 

  • Place a few drops of food coloring into the lemon. 

  • Squeeze a quarter-sized amount of dish soap into the lemon. Bubbles are evidence of chemical reactions, and the soap makes the reaction more visible and exciting.

  • Take a spoon or craft stick and stir the lemon and lemon juice that you set aside in step 2

Chef Frank Proto’s Kids Get the Fluffiest Pancakes
The Director of Culinary Operations at the Institute of Culinary Education, loves making pancakes for his kids, the fluffier, the better. Here’s his trick.

Ingredients:

  • 2 ¼ cup milk

  • ¼ cup cider vinegar

  • 3 eggs

  • ¼ cup vegetable oil or melted butter

  • 1 tbsp vanilla extract

  • 3 cups AP flour

  • ¼ cup sugar

  • 1 tablespoon of baking powder

  • 1 ½ teaspoon baking soda

  • 1 ½ teaspoon salt

Directions

  • Mix the milk and vinegar and let sit for 5 minutes. 

  • Add the eggs and vanilla and whisk until combined. 

  • Place all of the dry ingredients in a bowl and whisk to combine.

  • Add the wet to the dry and mix until combined.  Do not over mix, there should be a few lumps in the batter. 

  • Cook on a buttered griddle or pan.
