I don’t know about you, but when the political noise gets a little too
loud, I find myself gravitating toward the kitchen. Something about
slowing down to chop veggies, smelling the wafting flavors mix together,
and having a quiet moment over the stove is truly grounding.
For me, cooking has always been a way to reset. After a long day in
Congress, making a meal reminds me of why we do this work in the first
place — to care for our neighbors and create something beautiful out of
that care.
Lately, I’ve been making a new recipe that has quickly become a favorite
comfort dish: Roasted Peppers Vegetarian Tamale Pie. It’s warm, hearty,
packed with flavor, and perfect for feeding a crowd (or for leftovers
after a long day of fighting for our democracy).
