Did I ever tell you about my marinara journey?
Back in my early 20s, I lived in the NYC region and had a lovely neighbor, an old lady who had immigrated directly from Italy. She didn't speak loads of English, but she and I hit it off sitting on a shared balcony, and she taught me how to make marinara "so I could get married." This wasn't canned to be preserved for later. It was a "Sunday Sauce" that simmered all day long and got used during the week.
Fast forward to after I actually did get married. Sandra, one of my besties in Canada invited me over for her annual spaghetti sauce canning extravaganza. I was hooked after tasting the delicious sauce and taking home my own jars. This was my first canning experience and I absolutely loved it!
Years later, I combined the two recipes and came up with my own version, which my kids nicknamed "Snowfall Spaghetti Sauce" because I told them that was how we could tell it was ready - we waited until the first flake fell before cracking open a jar.
Here's my recipe and my process. It's very simple and easy, and if you want, you can jazz it up at serving time with meat, sautéed veggies, or whatever your little heart desires.
